Tasting Notes: Very pale rose onion skin with notes of white pepper, kumquat, smoke, cut grass and a savoury twist. A focussed entry with a soft mid-palate ripeness and texture balanced by a lively acidity. Intriguing notes of smoked meat, grilled peach, mandarin and wild raspberries, the wine has a nod to the Bandol styling and travels to a persistent finish.
Viniculture: The Lothian Mourvédre Rosé was handpicked on 26th March 2022.
The block had been grown with a ballerina trellis, with its more open canopies which ripened the grapes. Grapes were picked in the early morning and fed into the press for whole-bunch pressing. The degree of ripeness and the gentleness of the whole-bunch pressing, allowed all the juice to be used without fear of excessive colour pick up.
The wine was kept on its gross lees for about 4 months with stirring when needed. The wine was racked and bottled with the same dryness at which it finished the ferment.
