BIOSPHERE:
PINOT NOIR
Delicate and elegant, this Pinot Noir opens with vibrant notes of cherry and wild strawberry, complemented by subtle hints of pine bark and wood spice.
The palate is soft and fruit-driven, with lively acidity, creamy raspberry undertones, and finely textured tannins. A clean, chalky finish makes this a refreshing, refined expression of Pinot Noir.
BIOSPHERE:
CHARDONNAY SUR LIE
This cool climate chardonnay offers a refuge for those drinkers who avoid Chardonnay because of the wood they expect to find. This unwooded Chardonnay is fermented in a temperature controlled stainless steel tank and then left on its lees. These are the yeast cells that fall to the bottom of the tank after fermentation. Lees are super protective and with regular stirring keep the wine fresh and protected from oxygen. In time they lend the wine a sophisticated mouthfeel and length.
A pale lemon colour, the aroma is fresh and lively with frangipane, vanilla and cream fraiche intertwining with the enticing scents of nectarine, citrus and apple flesh with a dusting of spices and honeysuckle. A mineral-edged acidity upon entry, this mid-bodied breezy Chardonnay exhibits notes of crushed biscuits, lees and juicy orange segments. An oatmeal creaminess in the mid-palate continues to the long finish with a lick of vanilla on the conclusion.
BIOSPHERE:
SHIRAZ
Rich and deeply coloured, this Shiraz offers expressive aromas of dark berries, plum and chocolate, with a subtle wild herbal note that adds complexity.
The palate is fresh and focused, with juicy blackcurrant fruit supported by fine, firm tannins and balanced acidity. Floral hints and a touch of black pepper add lift and spice on the finish. A structured yet vibrant Shiraz with real personality and excellent food-pairing potential.
