Tasting Notes: Pale rose quartz with perfumed aromas of rose petals, red cherry and a touch of white pepper. A fresh, vibrant entry with fruit richness yet underpinned by a chalk-edged acidity. Macerated cherry, yellow apple and strawberry fill out the mid-palate and give a wonderful depth of flavour. A clean, persistent wine with excellent length, plenty of fruit and a cleansing acidity.
Viniculture: The block had been grown with a ballerina trellis, with its more open canopies which ripened the grapes. Grapes were picked in the early morning and fed into the press for whole bunch pressing. The degree of ripeness and the gentleness of the whole-bunch pressing, allowed all the juice to be used without fear of excessive colour pick up.
The wine was kept on its gross lees for about 4 months with stirring when needed. The wine was racked, and bottled with the same dryness at which it finished the ferment.
